Alison Roman’s Tangy Spicy Pork Ribs: I haven’t really made ribs much in my life, but wanted to make something different this weekend for when my cousin came over for dinner. I picked up baby back ribs from the butcher and then cut the recipe in half since I only had two small racks. I didn’t have any pan drippings as the recipe said but the ribs were still super moist. I finished them in a pan with the glaze as I don’t have a grill. They were so tasty, will definitely be making these again!
Other things I cooked:
My warm potato salad with leek and bacon: an oldie but goodie from the archives, this made for a perfect side for the ribs to double up on pork flavour but have the comforting tang as well. I didn’t have parsley and all was fine. One of my fav sides for the summer!
Julia Turshen’s Vegetarian Carribean Pelau: I haven’t been able to find this exact recipe to link but if you replace tomato paste with ketchup in the link it’s all the same. I do one can of beans rather than two. This is one of my fav hearty veggie meals - I didn’t have spinach so I did diced red cabbage a bit earlier in the pot and it was perfect. I froze this into individual servings and it reheats really nicely.
The First Mess’s Soba Noodles: I used this recipe as the base but then tweaked the sauce slightly since I didn’t have ginger, adding in about a tbsp of peanut butter to make it more viscous and minced garlic. I basically cleaned out my fridge with the veggies I used: cucumber, red cabbage, orange segments, green onion, and avocado. For the tofu I cubed and tossed in some cornstarch, salt and lots of pepper. I pan-fried it until golden then turned off the heat and tossed in some sambal olek and honey for a quick glaze. This held up nicely in the fridge for three days (although the tofu loses its crunch).
Kimchi, cheese, corn quesadilla with hoisin: I had tortillas left over from burritos last week so wanted to use those up. Tried the combo of kimchi, cheese and cooked frozen corn, and it was delish! Served with hoisin sauce.
