Mocha Almond Cookies: these are one of my favs in the archives of my site - super chocolatey, a little salt and great texture from the almond flour and butter. I didn’t have baking powder so I did ⅔ tsp of baking soda instead and omitted the vanilla because I don’t have that yet. They still turned out great!
Other things I cooked:
Hot Honey Chicken Salad: this week was a lot of leftovers and exploring M&S prepared food aisle. I used up all the veg in my fridge (red pepper, cucumber, red onion, lettuce), did a quick dressing of M&S sour cream and chive dip thinned out with some apple cider vinegar, added in shredded aged cheddar, some sweet potato crackers broken in, and then topped with M&S buttermilk chicken tenders that I tossed with some sriracha and honey. I may or may not have had a few pints before this creation - it was so delicious.
Roasted Potatoes with Fish Sticks and Kimchi: in the theme of using up odds and ends, I roasted some potato slices with olive oil, salt n pep, and paprika, then had these with fish sticks, kimchi and some sliced veggies. A grown-up fish sticks meal!
Eating
At Nopi. Wowowowow. I have been making Ottolenghi recipes for quite a few years but this was my first time eating at one of his restaurants. I was completely blown away. My two favourite dishes were the aubergine with tahini yogurt and sour cherry molasses, and the charred pumpkin with tamarind, roasted tomato and hazelnut dukkah. I will be thinking about this meal for a very long time!

My oven!!! At long last, I finally figured out how to turn on my oven. It’s so freeing to be able to cook with more than the stovetop.
Thinking
About the countryside. I spent the weekend at my cousins’ cousin’s place in Dorset, and it was so lovely to explore. We went on a few long walks (ahem, *climbs*) and saw some pretty spectacular views. It was really nice to slow down for a few days and spend some quality time with distant family.
