Cooking
Lemon Dill Tuna Casserole: I was craving a tuna melt on the weekend but didn’t have bread, so made a twist on tuna casserole inspired by my fav tuna melt flavours. No panko meant topping it with plain chips - probably my best decision lately. Hope you try out this new recipe!
Other things I cooked:
The First Mess Chili Lime Tofu Bowls: this is one of my fav “sheet pan” dinners - I use her recipe as a base and then play around with flavours. This week I added some soy and fish sauce to the chili-lime sauce, and also made a quick peanut sauce to drizzle on top. Hearty and delicious!
“Clean out the fridge” Sausage Pasta: I had a bunch of veg odds and ends to use up so I started by browning some sausage out of the casing, then added in mushrooms, zucchini, shallot, garlic, cherry tomatoes and cooked that all out together. Added a touch of cream and some pasta water for a perfect “fridge cleaning” pasta.
Molly Baz “Caesar-ish” Grilled Chicken Sandwiches: this is truly one of my fav summer recipe. I love that you make one base sauce for the marinade and the burger sauce (you split them before it touches the chicken!). I didn’t have fennel so I did thinly shaved red cabbage instead - delish! Made mine with chicken breasts but chicken thighs would be even better.
Drinking:
Rosewood Wine PTG - ooo a delicious summer red. Served it chilled and it was a refreshing Friday treat.

My picnic blanket. I purchased this last year and it is one of my fav Amazon finds. It folds up nicely with a handle to carry (or fits in a backpack), and the plastic bottom makes it great for sitting on damp or wet grass. My fav summer accessory!
Thinking
About home. Heading home to Nova Scotia next week and I’m SO excited. I haven’t been home since February and can’t wait to see my family and breathe in the salty fresh air.
