Cooking
As you may have noticed, I’ve been really into pasta lately. This week’s pasta feature was Alison Roman’s Cauliflower Pasta. It’s like pasta al limone, but with caramelized cauliflower and IMO, best with rigatoni. I made this on Sunday and ate it for lunches with a bright and acidic kale salad (which I usually stir in… controversial move).
Other things I cooked:
Smitten Kitchen’s Pizza Dough: wowzas, this recipe was soooo easy (no kneading!) and I love how she provides different recipes based on how much time you have. I did the 6-hour rise and it was delicious. Made two batches for 2 sheet pan pizzas, topped with lots of veggies and fresh mozzarella for Friday-pizza-night. The dough is really soft but if you follow her instructions, all will be fine.
Tik Tok tortilla things: I can’t stop. These are so handy, literally. They make a perfect pocket of goodness, crispy on the outside and so many layers inside. I made a breakfast one with eggs, black beans and salsa - saved to Reels on my Instagram.
Brussels Sprouts Salad with Lime and Miso by The First Mess (in her cookbook but linked here) - honestly SO GOOD. I will make this forever. Such a different way to eat Brussels sprouts. Roasty, toasty, and acidic - a great, unexpected combo.
Lemon Pepper Orzo with Shrimp and Snap Peas: such an easy weeknight meal - an oldie, but goodie from the archives of my site.
Alexandra Cooks Lemon & Blueberry scones: my absolute favourite scone recipe is from the Bobbette and Belle cookbook but I do not have it with me in Halifax, so I scoured the internet for a similar-looking recipe. These were delicious - I topped mine with a brush of heavy cream and turbinado sugar before baking.
Drinking
Weekend lattes: I love making a homemade “latte” on the weekend to switch up my coffee routine. The rough recipe is ½ cup- ¾ cup brewed coffee, ½ cup of unsweetened nut milk heated on the stove, 1 tsp of maple syrup, ¼ tsp vanilla extract, a pinch of cinnamon blended together. Gentle sweetness for a nice weekend treat!

I recommend eating chips. The best recommendation this year.

Using
My pastry mat*. I love this for rolling out any pastry or baked good. It makes cleaning up a breeze and the built-in rulers/pie circles make measuring that much easier.
Thinking
About snacks (probably because of the chips article). Being back to the work-from-home routine, having snacks handy really makes a difference to my day. My biggest win lately has been pre-cutting veggies on the weekend so I can grab them easily throughout the week. Ranch + sriracha is my go-to dipping sauce.
