Salmon with Mango Salsa: this is one of my go-tos in the summer (or when I need it to feel like summer)! I added some diced radishes to my salsa to add a bit of a peppery bite and subbed in shallot for the red onion since that’s all I had on hand.
Other things I cooked:
Eden Grinshpan’s Dill and Date Rice: this is so so good. Honestly, if I were cooking this for a crowd I would double the recipe because I can eat like half it by myself ahah. I did cut down on the salt since my chicken broth was seasoned, and I had salted butter. Used about 1 tsp of kosher salt.
HBH One Pot Stove Top Mac and Cheese: this is an easy, comfort food for a lazy night. I didn’t have the veg so I skipped those steps and just had it with salad. I halved the noodles but made the sauce the same as I prefer a saucier mac and cheese. I took out a bit of the pasta water before adding in the milk etc so I had more control of the sauce.
Brooke Williamson’s Corn and Rice Pancake: another one of my go-tos when I don’t feel like cooking much, it uses leftover rice, frozen corn and egg to make a tasty savoury pancake. I top mine with a little hoisin sauce and sriracha.
Tuna melt: this week’s included fresh dill, a little mayo, greek yogurt, grainy mustard, lemon juice, diced celery and red pepper.
NYT Maple Roasted Chicken: I *almost* love this recipe, but I did find the glaze to be a little french-toast-esq for my liking. Would be a perfect preparation if doing chicken and waffles, but I think next time I’d omit the cinnamon from the glaze and add in a few things to make it more savoury (more vinegar, salt, maybe hot sauce). I reheated it with some Maritime Madness BBQ Seasoning and it was so good.
Bryant Terry’s Fennel and Citrus Salad: page 45 in his cookbook Vegetable Kingdom - I loved the idea of this salad but found the instructions a little too much for me at home. I think I would make a version of this again but skip some of the steps - I’d just make a vinaigrette with the shallots, vinegar, dijon, agave and olive oil without the infusing steps. I loved the combo of dates, almonds, fennel and oranges - super refreshing!

Tiny Rock Frying Pan. I received this for Christmas last year - I thought it was so adorable but it’s also super practical especially as someone who lives alone. It’s the perfect size to fry one egg or to toast a small batch of nuts or breadcrumbs. I reach for it often!
Thinking
About my upcoming vacation. Going on my first two-week vacation since 2019 next week and I’m sooo excited. Will likely share some of my eats along the way but expect a delay in this newsletter. Will be back to regularly scheduled programming at the end of May!
