Roasted Squash Ramen: I’ve made Molly Yeh’s Pork Cutlet Ramen a few times this year - my two favourite parts are the miso broth and the soy-marinated soft-boiled eggs. I took some shortcuts, starting my miso broth with chicken broth I had in the freezer, and instead of pork cutlets, I did roasted kabocha squash. I didn’t have mirin so I used rice vinegar instead (not a direct substitute but it worked!). Such a hearty and delicious meal.
Other things I cooked:
First Mess’s Creamy Garlic Dressing: this is one of my favourite salad dressings, especially when the salad is the main event of my meal. I didn’t have cashew butter so I used almond butter instead. I used this to make a big chopped salad with all the odds and ends in my fridge, topped with some nutritional yeast.
Julia Turshen’s Almond Chicken Cutlets: I love this simple but super flavourful way to bake chicken breasts. I halved the recipe to do just 2 chicken breasts to get me through the week as an extra protein with my salads.
Priya Krishna’s Tomato Rice with Crispy Cheddar: I had so many tomatoes that I needed to use up, and this recipe was the perfect place for them. I halved the recipe and used pickled peppers because that’s all I had on hand. The rice is so good - delicious and comforting. I had my tomato rice with sausages.
Liz Moody’s Chocolate Chip Cookies: these are one of my fav small batch, one bowl cookies to get me through the week without the huge sugar rush. I didn’t have walnuts, so I doubled the oats. Ended up with a breakfast-esq oatmeal cookie. Delish! The recipe on the site makes 6 cookies but you can toggle to double or triple the recipe.

Thinking
About all of my upcoming travel. This year I have quite a few domestic trips planned for work and weddings. I think I’ll add an “Eating” section to the newsletter to keep this up when I’m away from the kitchen. This week I’m headed to Calgary, so next week I’ll share any notable eats I had!
