Welp I really struggled to get this newsletter out this week, but better late than never! Back to the regular schedule next week but in the meantime, here’s a sneaky mid-week version.
Cooking
Dumplings: As part of the @afewfunmoves community I did a dumpling cook-along last week hosted by @tarynwa of @noodle.project. Wow - I learned so much! Taryn was an amazing instructor, and I finally learned how to make the crescent shape dumplings. If you are looking for a virtual cooking class, highly recommend!
Other things I cooked:
Julia Turshen’s Garlic and Sesame Noodles: I couldn’t find anything similar online but these tasty noodles with brocolinni and mushrooms were so delicious and taste great at room temp too, making for a good “bring to work” lunch. Page 71 in Simply Julia.
Melissa Clarke’s Bittersweet Brownie Shortbread (NYT): I made these last summer for the first time and they are always such a hit - buttery shortbread on the bottom and bittersweet, fudgy brownies on top. Unfortunately, my glass pan dramatically EXPLODED when I took them out of the oven, so I didn’t get to enjoy them, but … I’m sure they’ll be great if you make them haha!
Half Baked Harvest Enchilada Bake: My sister-in-law raved about this recipe so I had to try it out. Such a tasty, one-pan meal! I added some small diced butternut squash in at the same time as adding the onions and meat (about 1.5 cups), and then stirred in ½ cup of frozen corn before topping with the cheese to add some extra veg. I also cut down the rice to ⅔ cup since I was cooking it just for myself! Made for great leftovers for the week.

Sawdust City Tropical Storm Daiquiri IPA - wowow this was such a mind-blowing flavour combo. Very summer-y!

My quarter sheet pans. I’ve posted about them before but especially for cooking for 1, they are so handy when I need to roast or bake something. They are also the perfect size for my little freezer if I need to freeze something on a sheet, like dumplings. Way less overwhelming to clean too!
Thinking
About how delicious a perfectly ripe mango is. I got two Ataulfo mangoes in my Fresh City Farms veggie/fruit box last week and they are just the best snack.
