Glazed Chicken Meatballs: these are an oldie but goodie from my site. I made the glaze with apricot jam this time and it was so good. Served with sweet potato fries (linked below) and roasted Brussel sprouts.
Other things I cooked:
Ottolenghi Sweet Potato Fries: I love this method for sweet potato fries - the cornmeal adds a crunch even when the fries themselves aren’t 100% crisp (which I find hard to achieve in the oven). I did half sweet potato, half regular potatoes.
Buffalo Chicken Sandwich: I followed How Sweet Eat’s Honey Hot Buffalo Chicken Wrap but used larger pieces of chicken breast instead. I also didn’t have Italian bread crumbs so I added some cornmeal to my panko crust. Topped with a coleslaw (mixed coleslaw mix with ranch dressing with a splash of apple cider vinegar), on a squishy bun with some grated cheddar cheese.
Ottolenghi Pasta with Chickpeas and Za’atar: this is one of my favourite pantry pastas - so easy, flavourful, and also easy to halve the recipe. I didn’t have anchovies so I did a splash of each Worchestershire sauce and fish sauce.
Carla Lalli Music’s Lemon Polenta Sheet Cake: wow cake was soooooo good. I had 6 eggs that were reaching their best before date so I used them for this cake - the method is really different (uses a “reverse creaming method”) but the cake was moist and delicious. Makes a big cake (9x13 pan, with lots of height), going to add this to my list for future gatherings.
Eat Cho Food’s Pork and Cabbage Dumplings: My fav pork dumpling recipe - and the dough is so easy to make too! Served these with a sweet soy dipping sauce (equal parts soy sauce, white sugar, water simmered until sugar dissolves), chilli oil, and a peanut slaw (will share a recipe someday!).
Alison Roman’s Sizzled Scallion Dip: this is my go-to dip, made it on Saturday for chips and dip - also great with veggies or bread!
Yewande Komolafe’s Braised Short Rib Stew: wowowow this was soooo delicious. It’s definitely a Sunday recipe - it took about 5 hours total, but so worth it. The sauce is so complex - you start with fennel, shallots, garlic, tomatoes braising with the short ribs and then you strain out all the vegetables, leaving this smooth, creamy sauce that you add coconut milk to. A sweet twist on the beef stews I grew up eating, will definitely be making this again. I did 3lbs of short ribs since I prefer more veggies and to save on $.
Molly Baz Miso Apple Tart: another wowowow recipe. This was so quick and easy to come together, and soooo delicious. I love a sweet and salty dessert and this hit the mark. Adding to the “low effort dessert” repertoire.

My salad spinner. I am *trying* to get in the habit of washing my greens as soon as I buy them and putting them in a baggy with paper towel to stay crisp. It is such a game-changer to not have a. Soggy lettuce b. Have to wash the leaves each time I need some. This salad spinner is my fav - big enough to do lots of veggies at one time, easy to use top, and lots of spin!
