This week was pretty sparse for cooking as I had a lot of work activities out of the house. No great photos!

Jeremy Bonia Dad’s Pancakes: I saw this recipe shared on IG this week and thought I’d try it out. These were the most fluffy pancakes I’ve made in a long time. Adding to my pancake rotation!
Other things I cooked:
Julia Turshen’s Caribbean Pelau with Kidney Beans and Spinach: I can’t find a link online but it’s page 56 in Simply Julia. This is one of my favourite vegetarian mains. I halve the recipe because there’s no way I could eat it all in one week, and I don’t think it would freeze well. Delicious with some lime juice, hot sauce and avocado on top.
Lemon Pepper Orzo with Shrimp: I riffed on this recipe on my blog for a quick supper on Saturday night, using asparagus instead of snap peas and bigger pasta instead of orzo. I reserved a little bit of the pasta water to help it come together and coat the pasta more. Simple and delicious!
Red Curry Noodles: Sunday night I was feeling noodles, so I started with shallot, garlic and ginger, added in red curry paste, and then used the leftover coconut milk from earlier in the week with lime juice, fish sauce, and a touch of coconut sugar to make a sweet and spicy sauce to coat some noodles. I stirfried some veggies to top the noodles with!
