Cooking
A lot of snack plates. I’m still getting settled back in my apartment and haven’t had the time for a ton of cooking. Snack plates are the best for ease - most days this week I’d have an open face hummus sandwich with veggies, then some roasted almonds, cheese, and sliced apple.
Other things I cooked:
Julia Turshen’s Swedish Meatballs: I love these - the perfect comfort meal. I froze half of them in the sauce for future me, and then had two servings of them this week with egg noodles and steamed broccoli.
Annie’s Mac and Cheese with Brussel Sprouts: the mac and cheese content is back. I do Annie’s White Cheddar Shells, and then fry up thinly sliced brussels sprouts in a bit of olive oil while the noodles cook, seasoned with salt, pep, and crushed red pepper. My bowl is usually half noodles, half brussels sprouts, making for a super-filling lunch.
Molly Baz’s Steve Au Poivre: This Sunday I felt like treating myself to a nice dinner so I went to my butcher and got a beautiful ribeye steak. I made Molly’s recipe from her cookbook but I’ve linked the online version. So decadent and delicious!
Jamie Oliver’s Best Roasted Potatoes: wowowow these were amazing. When I was in London in 2019 I had potatoes just like these at a pub and couldn’t figure out how they made them. These take some time (I did it all in one day but my potatoes were a little wet inside, I see why cooling overnight would help them dry out), but they were amazing. I used duck fat and thyme because that’s what I could find at the market.
Julia Turshen’s Any Frozen Fruit Cobbler: this is one of my favourite easy desserts. I halved the recipe and made it in an 8x8 pan so I’d have a manageable amount of leftovers for myself. I used heavy cream since I had to buy that for the steak and just omitted the butter. I baked it for 10 mins longer than the recipe called for.

Using
Better Than Yia Yia’s Lemony Hummous. There are very few store-bought hummuses that I like but this one is amazing. If you are local to the GTA, many shops carry it (I get it at Fresh City Farms or Rowe Farms). It’s fluffy, bright, a little spicy - so good. This and their tzatziki have been key components of my snack plates this week. Sidenote, writing this reminds me of one of my favourite scenes from The Mindy Project.
Thinking
About cooking for one again. It’s definitely an adjustment getting back to cooking meals for just myself now - grocery management is always the biggest challenge. Getting back into the groove of relying on my freezer again!
