Cauliflower bites: my favourite way to use up a cauliflower that’s been chilling in the fridge for a little too long. Super tasty and addictive! Recipe now on the blog.
Other things I cooked:
Oh She Glows Enchiladas: clean out the fridge edition. Added zucchini, swapped butternut squash for the sweet potato (roasted in the oven in bite-sized cubes before adding to the filling), swapped kale for the spinach and topped with cheese b/c we’re not vegan. They were a perfect Sunday meal that made for great Monday and Tuesday lunches.
Mocha Almond Cookies: from the archives, these are a slightly heartier cookie that are a great transition from the sweets over the holidays. Almond flour and almond butter help balance the sugar, making them stick with you for a little bit longer.
Shrimp burgers: a structural fail but so tasty. No recipe yet. I added ginger and hoisin sauce to the patty and topped it with avocado and sriracha mayo. Will keep working on these until they are perfect!
Baked salmon with a mixture of lime juice, dijon mustard, maple syrup, red pepper flakes - so good. Working on the recipe. Served with rice pilaf and roasted broccoli.
Chef Brooke’s egg/rice/corn pancake - using the leftover pilaf instead of plain rice. Her recipe (which also makes for a great breakfast) is in her IG post caption.
Annie’s Mac and Cheese (White Cheddar Shells) with roasted butternut squash and mushrooms mixed in + brussel sprouts fried in coconut oil. Because sometimes you just need some boxed mac and cheese but are craving lots of veggies.
Drinking
Now that I’m back to only have a few drinks a week (instead of the holiday “what day is it?” fog) I’m seeking super flavourful beverages that I can sip throughout the night. My favourite this week was this Simcoe IPA from Garrison Brewery. Super piney, but not too bitter. Lately, I’ve been drawn towards more citrus-y IPAs so this was a nice change.

Thinking
About how different cooking is when you remove meat from the equation. This week I’ve been challenging myself to eat mostly plant-based, and it’s completely changed how I think about meals. Usually, I go: “what protein am I going to cook?” And then I build a plate around it (eg. roast chicken + sides). But this week has been fun and challenging to put together meals that don’t center around meat.
