Cooking
Spanakopita: I made these on New Year’s Eve and froze the remaining for future-me snacks. They are so flavourful and crispy and keep super well in the freezer. Recipe is now on the blog!
Other things I cooked:
Leftover turkey tacos: loved this idea from @eatwithjessie - super easy and you forget you’re eating leftover turkey dinner.
My go-to winter side salad: since we’ve been eating a lot of meat and pastry (or pastry-wrapped meat), this salad from the archives has been key to break through the richness.
Sour cream and chive rolls: I have Claire’s new cookbook Dessert Person on my “to buy” list but in the meantime, I tried this recipe from it, which is available on BA’s website. I didn’t love these as rolls because I found them too dense for me (there is also a chance I killed my yeast when I added it to my milk, I think it was too hot), but sliced and toasted they were unreal. Will definitely try again.
Grossy Pelosi Vodka Sauce: always a go-to, I’ve started tweaking the recipe slightly (using a full 5.5 oz can of tomato paste, halving the olive oil and the cream). This week I put it on lentil pasta for a more filling main.
Super-hero muffins: these are super hearty and super delicious. Made a batch on Sunday for this week’s breakfasts.
Drinking
Hard Seltzer from North Brewing Co: I don’t like sweet drinks and I especially don’t like ‘fake’ sweet drinks that taste like aspartame. North Brewing’s Hard Seltzer is neither, just a lightly flavoured sparkling water that happens to be 5% alcohol.
Reading
This spectacular article on the bucatini shortage in 2020. It’s worth the read for the laughs. Who knew Big Pasta had so much #drama.
Following
@luscas.sin - I really want to try his tomato egg soup that has been blowing up on IG lately. I love his tutorials, I’ve learned so much from his account.
Listening
Mostly just evermore. But Maggie Rogers’s archives album has made it into the mix too.
Using
My butter ruler. This came in handy during all the baking over Christmas, one of my favourite kitchen tools for baking!
Thinking
About vegetables. After a couple of weeks of cheese, meat, pastry, cheese, meat, pastry, my body is craving lots of plants. I’ve been digging up some of my favourite vegetarian recipes, expect to see more veggies here next week!
Laughing
At this cartoon, which my friend sent me when I told her I liked hard seltzer.
