German Apple Pancake: this was delicious and I severely messed up the recipe, so I can only imagine what it would be like if made properly! The recipe is linked to @feedtheswimmers IG post with instructions in the caption. I got a little confused by the flour instructions - the key is it should be ½ cup of flour total! I ended up accidentally doubling that and having to thin out the batter with oat milk, but honestly, it was still tasty. But don’t be me. Use ½ cup of flour.
Other things I cooked:
Buttercup Squash Pasta ala this Miso-Butter Pasta: I had some roasted buttercup squash in the fridge so I couldn’t follow the recipe method-wise, but I used the ingredient list as a starting point to make a creamy squash pasta. Delish!
Sesame Rice, Tofu and Quickles: this is my favourite way to cook tofu - unfortunately no links are available, but it’s on page 6 of Simply Julia*!
Glazed Chicken Meatballs: a go-to for an easy supper - super versatile and quick to come together. This time I used apricot jam in my glaze and it was delish!
Apple Kale Salad with Miso-Mustard Dressing: love love love this salad from @thefirstmess - tastes like a kale salad you would get at a resto. I ended up adding a little extra maple syrup to the dressing because I’m basically Elf, but loved this for a fall/winter transition salad. I didn’t have chives so I used mint instead.
Lazy Chilaquiles**: one of my fav quick brunches, easy to make for one person - heat up salsa in a pan with tortilla chips ensuring they are coated, and cook on medium-high until they get perfectly crispy-gone-soggy, and some browned bits appear (salsa should be soaked into chips). Serve with greek yogurt, top with some salty cheese (I did parm), and a fried egg!

Baking soda. I love my dutch ovens but have had some discolouring happening from recent stews. I googled methods and read about boiling baking soda and water in the pot, then using a brush to scrape off the bits, and it worked like a charm! Miracle stuff!
Thinking
About squash. I feel like I’ve eaten a little too much squash lately that the thought of making something with my newly arrived buttercup squash from my CSA bag makes me sad. Last year I started an article on the many uses for squash - going to brush that off and hopefully share next week so you too can get some squash inspo. Squash should never be sad!
