Simple Sausage and Tomato Pasta: I posted about this to my stories over the weekend, but I took a sausage out of its casing and browned it in a pan, then added one tomato grated (such an easy way to get all the tomato flavour without the skin!), and a handful of spinach. Tossed in the cooked pasta, a pinch of red pepper flakes, a spoonful of pasta water, and seasoned to taste with salt and pepper. Served topped with parm and a scoop of ricotta. Perfection! This is for one person, multiple by however many people you are cooking for (2 people = 2 sausages, 2 tomatoes).
Other things I cooked:
Almond Parm: love making a batch of this at the beginning of the week to top salads with, I use the recipe in the Healthnut cookbook. This link here is pretty close, instead of cashews, HN uses almond flour and a touch of olive oil.
Glazed Chicken Meatballs: this oldie from my website is great to prep ahead of the week to reheat for lunches. I had mine throughout the week with a lemon-y salad.
Roasted Sweet Potato & Lime Dip: I brought this over to a friend’s house for apps night, a fun twist on guacamole. An oldie but goodie from the site.
One-Pot Pasta with Lemon and Ricotta (NYTimes): this was a super simple one-pot pasta meal for an easy weeknight meal. Reminded me of pasta a limone with ricotta instead of cream.
Hainanese Chicken and Rice: I’ve written about this recipe many times, it’s one of my absolute comfort favourites. Made this with steamed broccoli for my old roommates on Friday night (first time seeing each other indoors since March 2020!). I follow @cellymaemah’s IG story highlights for the recipe.
Spiced Chickpea Stew (NYTimes): another pantry staple go-to, prepped this for this coming week’s lunches. Love topping it with lots of fresh lime juice, a scoop of plain greek yogurt and stirring in a touch of maple syrup. I went heavy on the kale for this one, haha!

Using
One of my favourite things about the Hainanese chicken recipe is it makes so much delicious chicken broth that I freeze for future-me. These 32 oz containers I bought a few years ago are perfect for freezing, and general food storage*.

About this quote from @mynewroots “It’s strange having your life in two places, since no matter where you are, you miss the people that make your life wonderful”. I’ve been really enjoying settling back into my life in Toronto and catching up with all the people here that make my life wonderful but also missing everyone back in Nova Scotia.
