A little late today with the newsletter as I got home late last night from a weekend away with my mom and aunt in Larry’s River, Nova Scotia, which is the fishing village where my maternal grandparents grew up. This week’s newsletter is a recap of our weekend of treats; I hope it will spark some meal inspiration for your next weekend trip. I’ll be back to the regular newsletter format after the long weekend!
Cooking
My mom’s shrimp tacos: these are one of my favourite meals - she sauteed frozen raw shrimp (straight from frozen) in a pan over low heat with a spoonful of chilli oil. We made mango salsa, mixed lime juice into sour cream for a lazy crema, grated cheddar cheese, and diced our fav fresh veg toppings (lettuce, radish), and made some guac.
Sausage breakfast sandwiches: fried egg sandwiches are a go-to brunch during family trips to Larry’s River. This time we made them with sausage patties (took breakfast sausage out of the casing and formed into a patty), made some quick pickled red onion (red wine vinegar, sugar, salt, boiled on the stove - poured over the onion and let them sit), pea shoots, tomato slices, and a dijon mustard-mayo combo. Oh, and cheese!
Snack board: we stopped at Whistleberry Farms on our way down and picked up tasty meats and cheeses. Also made Alison Roman’s Sizzled Scallion Dip (made with sour cream!) to serve with a veggie tray.
Spaghetti, garlic bread, caesar salad: my mom made spaghetti sauce to bring down, we put together a caesar salad with Hope Blooms smoked lemon caesar dressing, and I toasted up some cheese bread from the bakery with a combo of butter, minced garlic, a dab of dijon mustard and parmesan cheese.
Open-face breakfast sandwiches with tangy tomato chutney: yesterday morning we made another take on the fried egg sandwich - open-faced with cheddar cheese, tangy tomato chutney, bacon, fried egg, topped with pea shoots dressed with lemon juice, olive oil and salt n pep!
