Cooking
Oven Pulled Pork Sandwiches: new to the blog, this recipe is less of a recipe, but more of a guide. It’s by far my most requested recipe by friends and family, and I’ve always avoided sending it because there’s so much to explain. Last month I finally took the time to write down my thought process. Take time to read through the guide before starting, it’s kind of a choose-your-own-adventure based on time available to you, ingredients on hand, and preferences for sweet/salty/savoury.
Other things I cooked:
Ottolenghi’s Roasted Squash with Corn Salsa: one of my new fav sides, perfect for summer. Roast the squash in the morning before it gets too hot, and serve room temperature. The corn salsa is so flavourful and fresh!
Alison Roman’s Pasta Salad: I literally link this every week because I have been making it every week. Such a good summer side.
Nacho dip: our week in PEI was a lot of snacking, so I busted out this classic - sour cream and cream cheese base, salsa, cheddar, diced red pepper and green onion with some thinly sliced jalapeno. *chef’s kiss*
Julia Turshen’s Roasted Banana and Sour Cream Waffles: loved these - not too sweet, were perfect topped with plain greek yogurt, maple syrup and sliced banana.
The First Mess’s Crispy Maple-Mustard Cabbage: pg 195 in The First Mess cookbook. This recipe linked here is very similar. Loved this method, so addictive - will make cabbage this way always.
Julia Turshen’s Swedish Turkey Meatballs: I love these meatballs - so simple and easy to make. I served them with egg noodles tossed with butter, parsley and lots of freshly cracked pepper.
Drinking
Lake City Cider District 5 - big fan of the 6 pack of small cans.

To a lot of Joel Plaskett. Loving being home on the East Coast.
Thinking
About the healing power of vacation. It was so nice to unplug for a week (quite literally since we didn’t have service most of the time in PEI). Feeling rested and recharged.
Laughing
Have a great week!
