I traveled home to Halifax this weekend so my cooking was a bit sparse, cleaning out my fridge and eating out a bit. But here’s the mini-recap!
Glazed chicken meatballs: a go-to meal, served them with a sweet potato hash and roasted broccoli.
Butternut squash pasta: had some leftover roasted butternut squash in the fridge so loosely followed this recipe for creamy pasta.
Roasted potatoes with a fried egg, topped with cheddar, green onion, and diced tomato, New York Fries style (a true clean-out-the-fridge meal).
Alison Roman’s “pasta” salad: linked this one before, but a great summer salad, perfect at room temp, full of briny capers and chunks of parm.
BBQ burgers (just lean ground beef shaped into patties seasoned generously on each side with salt and pepper) with my fav burger sauce (mayo + Worcestershire), and all the toppings (cheese, bacon, lettuce, tomato, ketchup, relish, mustard)
Drinking
Wabamo by Sourwood Cider. Reunited with my favourite dry-hopped cider.

Using
My freezer! I cleaned out my fridge this week since I am going to be in Nova Scotia for an undetermined amount of time. Froze lots of ingredients for my return - did the method of freezing individually on a parchment paper-lined sheet tray first then putting into freezer bags (ensures things don’t stick together in the bag!). Did this for cubed tofu, grated cheese, and roasted potatoes (all separately).
Thinking
About how nice it was to fly home and not go to a basement for 14 days. Feeling really grateful for vaccines!
