Cabbage and green apple slaw: working on typing this up for an official post on my site but for now, here’s the rough recipe! This slaw is super bright and acidic, goes great with grilled meat. You can omit the mayo if you plan on having the salad sit out in the summer heat. Play around with the veg too! Great with peppery radishes or sweet grated carrot, or with just the basics. I would dress it right before serving to ensure the veg stays nice and crisp!
1/4 cup apple cider vinegar
2 tbsp extra virgin olive oil
1 tbsp mayo (optional - if omitting use another 1 tbsp of olive oil)
1 tbsp grainy mustard
2 tsp honey
1/4 tsp salt
Freshly cracked black pepper
1/4 tsp smoked paprika (optional - adds smokey savouriness)
Whisk together or shake together in a mason jar.
1/2 head of green cabbage, thinly shaved
1 green apple, thinly sliced
Optional additions: thinly sliced radish, grated carrot, soft herb like parsley or cilantro or thinly sliced green onion
Toss veg in the dressing right before serving!
Other things I cooked:
Garlic scapes: I tossed them in some veg oil and grilled over medium heat on my bbq in a veggie basket. Moved them around every few mins to ensure one spot wasn’t burning, probably cooked for 10 mins until tender (like what asparagus looks like cooked). Seasoned with salt and pepper, plus a squeeze of lemon juice. Perfection!
Ottolenghi Pasta with Chickpeas and Za’atar: loved this so much! Super filling and comforting. I used orecchiette and then subbed in kale for the spinach because that’s what I had on hand. Just used one can of chickpeas since my can was 640g.
Martha’s Quick Strawberry Jam: followed her ratios, cooked for longer until it reached a deep red colour. Instead of chopping I just mashed with a potato masher once the berries cooked down.
Jalapeno Grilled Pork Chops: these were super tasty - I didn’t have red onion so just used white onion for the pickled relish. Delicious.
Honey Pepper Butter: whipped up a half batch of this to put on grilled sourdough bread
Lemon Olive Oil Cake: the easiest one-bowl cake, perfect for summer - not too sweet and goes great with fresh or cooked fruit.

My bench scraper. Love this tool for carrying my chopped veg from my island over to my stove. Makes lifting items and getting all the last bits off the cutting board easy!
