Grossy Pelosi’s Sheet-Pan Chocolate Chip Cookie: wowowow so so good. I weirdly didn’t have white sugar (ran out!) so I subbed in 2 cups of icing sugar instead. I cut back on the chocolate chips (used about 16 oz) and topped mine with flaky sea salt. I also like a more crunchy cookie so I baked mine for 15 mins more than he reco’d, but I would stick with his timing if you like gooey cookies. I’m going to wrap and freeze half the pan for future me, to heat up in the oven and serve with ice cream when I can host dinner for friends again!
Other things I cooked:
Butternut Squash Mac & Cheese: I swapped in roasted acorn squash, and froze half the sauce for future me. When I cooked the noodles I added ½ cup of red lentils a few minutes earlier to add some extra protein and fibre to the dish. I topped it with panko mixed with olive oil and a pinch of dried thyme (+salt n pep) since I didn’t have crackers on hand. Reheated for lunches, topping with some sriarcha.
Ham and cheese sandwiches: once a year I always go through a big ham and cheese sammy kick. Mayo, yellow mustard, sliced ham, cheese, lettuce, tomato on squishy whole wheat bread *chef’s kiss*
Lazy chilaquiles: this is one of my favourite savoury brunches and is super easy to make for 1 person. Served with some lime crema (sour cream + lime juice). Saved the method to my IG highlights under “easy brunch”.
Andy Baraghani’s Grilled Pork Shoulder Steaks with Herb Salad: I do not use the term “flavour bomb” loosely here when I say this is a flavour. bomb. The marinade is so easy, and the pork grills up quickly with amazing charred bits. I served this with sticky rice, iceberg lettuce and mango salsa for lettuce cups. Perfect refreshing summer dish!
Drinking
Rosewood Estates Flora - I love Rosewood wines and their honey. Their 2020 Flora is a perfect in-between of red wine and rose. Delicious.

Using
Hope Blooms Smoked Lemon Caesar Dressing: this is my absolute favourite store-bought dressing and you can only buy it in Nova Scotia! I always stock up my suitcase with it - it’s sooo good and makes the best caesar salad. If you’re in NS and haven’t tried it yet, do it! I like to add a little fresh lemon juice and lots of parmesan and pepper to my salad.
