Healthnut’s Gluten-Free Pancakes: I wrote about these a few newsletters ago and definitely undersold them. I now love making these on Saturday morning so I have pancakes for the next few days (starts off my Monday great!). My favourite way to eat them is with a good heaping of plain greek yogurt, some maple syrup, and then I microwave frozen raspberries until they form a sauce to drizzle on top. So good!
Other things I cooked:
White-pizza style kale: such a fun, flavourful way to eat kale!
Almond chicken cutlets: I couldn’t find this one online but they are pg 77 in Simply Julia. Going to be my go-to chicken breast recipe now, tastes like shake and bake!
Sweet and sour spaghetti squash: I roasted the squash normally (cut in half, seeds scooped out, face down on lined baking sheet at 425F until tender), then in a pan I heated red wine vinegar with honey (1 tbsp, 1.5 tsp respectively) until a syrup formed, added in a little butter to emulsify, some red pepper flakes for heat, and stirred in the spaghetti squash. Seasoned with salt and pepper!
Lamb arayes: these simple, stuffed pitas with spiced lamb meat are the perfect summer food - easy to grill and limited prep time. Pg. 20 in Simply Julia.
Chopped salad with tahini and za’atar: I loved this salad from Ottolenghi - so bright and fresh, and the tahini adds a little earthiness to bring it all together. I added mint as well since I had that on hand.
Citrusy Cheesecake: a go-to dessert recipe for me, I love this easy cheesecake from Alison Roman.
Drinking
Left Field Squeeze Play Rainbow Sherbet Sour: I’ve enjoyed all of LF’s sours but wow, this actually tastes like rainbow sherbet! So so good, they add a little lactose to give it a smooth finish.

About summer cooking. We had a heatwave in Toronto this week and it reminded me of the necessities to great summer food: limited oven time, easy prep, lots of freshness. Working on new recipes to share with this in mind!
