Taking a little break this week from the usual newsletter format as I’m on “vacation” celebrating my birthday!

Za’atar chicken pitas: I browned cubed chicken breast in a pan over medium heat, seasoning with salt, pepper, and za’atar. Once it was cooked through I added the juice of half a lemon. Served on a warmed pita with tzatziki, tomato, cucumber, feta and lettuce!
