Cooking
Recreated a burger that one of my favourite restaurants in Toronto posted last week. Lovely crusty sesame bun from my local bakery, romesco sauce (recipe here), flat-top seared beef pattie (just shaped medium ground beef and crusted well with salt and pepper), grated manchego cheese, crispy bacon and a fried egg (used this method), arugula, avocado mayo. Wowow it was delicious. Served with extra romesco for dipping and Ottolenghi’s’s sweet potato fries (my new favourite!):
Other things I cooked:
Roasted tomato & lentil soup: riffed on the tomato soup on my site, roasting fresh tomatoes, onion, garlic and jalapeno. Working on typing it up for the site, but added some details on ratios to this post. Ate for lunches with grilled cheese.
Pearl couscous salad and chilli oil shrimp: salad recipe from Simply Julia cookbook, and for the shrimp I just sauteed them in a non-stick pan with a spoonful of chilli oil, a good squeeze of lime juice and some salt and pepper!
Mom’s Oatmeal Chocolate Chip Cookies: working on typing these up for the site!
Sticky Chicken with sesame rice and steamed broccoli: from Simply Julia
Llubav’s Green Spaghetti: also from Simply Julia. Used up what I had on hand in the fridge following her method: kale, spinach, mint, parsley.
Cinnamon Sugar Scones: loved these. I ended up having to bake mine for an extra 5 minutes to ensure they were fully baked through - you definitely want them golden and browned!
Drinking

@lizmoody - I don’t love all of her content (I think sometimes her positioning as “healthy” can create a “good” vs “bad” perception for food) BUT her recipes are awesome. I’m excited to try her freezer burritos- hoping to make the chickpea and cauliflower ones next week if I can track down cauliflower.

Using
Bee’s wax wrap. I’ve had mine for probably 3 years and it’s awesome to have a reusable “saran wrap” to save on waste. AND I discovered this weekend that it also makes a great grip for opening jars!
Thinking
A little too much these days. I am finding the COVID case numbers and stay-at-home measures particularly tough this time around so trying to focus on what I have control over, and *trying* to find joy each day. Like British rom coms and great cheese:
