Cooking
I didn’t do a whole lot of cooking this week as I had a lot of leftovers from my Easter dinner. A few meals were a very fancy combo of Annie’s Mac and Cheese with pan-fried brussels sprouts in coconut oil. Snack plates also made a big come-back this week (veg, hummus, crackers, cheese).
Here are the few things I did cook!
Sausage sammie: I picked up a baby baguette from my neighbourhood bakery, some pork and fennel sausages from my butcher, and sauteed sliced onions with sliced red pepper. Layered the sandwich with mustard on the bottom, then cooked sausage, onions/peppers and made a little aioli with mayo, lemon juice, parsley and garlic powder for the top piece of bread. Delish!
Grossy Pelosi’s Vodka Sauce: love this pasta sauce, super simple and sooo comforting. I tweak the ratios a bit - I use a full 8 oz can of tomato paste, mostly because I’m too lazy to measure it out and save the remainder. I also use less heavy cream, probably closer to ¾ cup. I then use pasta water to thin out the sauce if it’s too thick.
Carla Lalli Music’s Coffee Creme Caramel: wowowow made this as a Sunday baking project, so fun and so delicious! I love a good make-ahead dessert and I will definitely be making this again post-pandemic for dinner parties. A showstopper of a dessert for sure. The texture and flavour are so luxurious, yet light. I followed the recipe in her cookbook which has a bit more detail than the link here - I used 2 tsp of vanilla extract as I didn’t have a vanilla bean.
Drinking
A few years ago on a trip to Portugal, one of the most memorable meals I had was paired with sparkling red wine. I’ve been able to track down one in Toronto, this Zanotto Col Fondo Rosso. My new “treat yourself” wine. Pairs super well with a heavier meal, with the deeper flavours of red wine but the lightness of sparkling wine.

My quarter sheet pans. Now that I’m back in my apartment I love my smaller cookie sheets because typically I’m only cooking for myself and they’re waaay less overwhelming to wash.

About the cookbook Simply Julia. I am going to do a round-up post on IG later this week of everything I have cooked from the book but all I can say is this is the most “cookable” cookbook I own. You know how some cookbooks are more for inspiration, or for “project” cooking/baking? This is one you’ll pull out regularly when you need weeknight meals, or new recipes to add into rotation. I love everything I’ve made and will definitely make everything again!
