Cooking
New to the blog this week is my Nanny’s Lemon Loaf recipe. This is perfect with afternoon tea - it’s sweet, fragrant, and the glaze adds a tangy crust.
Other things I cooked:
Various recipes from Indian-ish cookbook by Priya Krishna: Caramelized Onion Dal, Squash Kaddu, Roasted Aloo Gobi, Roti Pizza with Cilantro Chutney
Lucas Sin’s Tomato Egg Noodle Soup: This was a delicious lunch soup on a rainy day. I halved the recipe to make it a single serving and it was so cozy and comforting. The egg was almost fluffy, amazing texture. Watch his IG highlight “T Egg Soup” for the recipe!
One-Banana Muffins: As the title suggests, I had one ripe banana to use up, and this recipe fit the bill! It made about 10 mini muffins, which I heated up under the broiler throughout the week as an afternoon snack, for a toasty, crisped banana muffin. I saved the egg yolk in the fridge for my breakfast taco later in the week.
Julia Turshen’s Sticky Chicken: You are going to see a lot of JT recipes here this week/next because I just bought her new cookbook “Simply Julia” and have been cooking my way through it. I halved the recipe to make 2 servings, it was a perfect quick weeknight dinner! Served it with steamed broccoli and brown rice.
Grossy Pelosi’s Breakfast Taco: This was the perfect simple breakfast this weekend. Tortilla, cheese, egg, topped with hot sauce and sliced avocado!
Julia Turshen’s Orange Greek Yogurt Cake: This loaf is super fragrant, it really does smell like creamsicles! Not too sweet, this will be my afternoon snack for the week.
Julia Turshen’s Jalapeno Popper Stuffed Chicken: wow this was delicious. Served with simple romaine and cilantro salad with a jalapeno vinaigrette from her book, and Bryant Terry’s Cornbread Muffins. These were so good, and you would never know they are vegan! I didn’t make the whipped sweet corn that’s in the link but have it on my list to try out once corn is in season.
Drinking
Left Field Lo Viste Mojito Sour. The perfect summer / dreaming-of-summer beer.

Following
@acozykitchen, I’ve been loving her mini-cakes and adorable decorations lately.

Using
My microplane. I’ve written about this before but it’s definitely one of my most used kitchen tools. This week I used it to zest citrus for baking, to grate garlic in various recipes, and to grate parmesan for topping a salad.
Thinking
About Easter Dinner. I am going to do a menu very similar to last year’s Isolation Easter Dinner for 1, although this year I’ll be cooking for my friend as well, so it will be for 2!
Laughing
Have a great week!
