Cooking
This week I returned to Toronto - it’s been busy getting settled back into my apartment that’s been vacant for four months. Cooking was sparse as I got back into my routine, but here’s what I made!
Andy’s East Coast Kitchen Cape Breton Oatcakes: these were delish - not quite the oatcakes I grew up eating, but still yummy! A little finicky to roll out but his recipe covers tips for working with the dough. Perfect with tea!
Chicken Zucchini Burgers: these are super moist, flavourful burgers without the egg or breadcrumbs. The recipe is in my IG feed (link here) but will add to my site soon!
Lemon Pepper Orzo with Shrimp and Snap Peas: I honestly make this about once a week. Made this Saturday night and have leftovers for lunches to start off the week!
Liz Moody’s French Toast Cinnamon Rolls: ok I loosely followed this recipe because I weirdly do not own a muffin tin. I halved the recipe, replaced the coconut sugar with maple syrup, and baked it in a brie baker for about 40 mins (I also poured all the egg mixture in, so it was more of a bread pudding than a roll). Served with plain greek yogurt and topped with extra maple syrup and cinnamon!
Drinking
Grapefruit Bubly. This is my favourite flavoured sparkling water I’ve tried yet! Also tastes great with tequila and lime juice, for a Paloma-inspired bevy.
Following
@turshen: I just ordered Julia Turshen’s new cookbook “Simply Julia” and am so excited to dig into it. I’ve been listening to Julia on a few podcasts talking about breaking free from diet culture and getting back to enjoying eating, not just cooking. I like her food philosophy!
Listening
Rose Cousins’s cover of I Wanna Dance with Somebody. I love everything Rose does, and this is the ultimate pick-me-up.
Using
My Trolley Dolly. My last granny cart suffered a major injury in the Fall and I had to throw it out. My mom sent me this one as a replacement and wow, what a dream. The wheels can conquer any curb or sidewalk, and the height of the handle is great. The weight distribution is perfect, and it feels like it almost has shocks? It also folds up for storing. I love this granny cart!!
Thinking
About adjusting to cooking for one person again (/sometimes two when my bubble friend comes over, as we both live alone). Going to clean out my freezer next weekend and get that back in action for saving servings!
Laughing

Have a great week!
